These quick Matcha Chocolate Chia Coconut Energy Balls are the perfect snack when you need a little pick-me-up in your day!

  • 1 cup shredded coconut
  • 4 Tbsp. coconut flour
  • 3 Tbsp. maple syrup
  • ½ Tbsp. coconut oil
  • 1 Tbsp. chia seeds
  • 1 Tbsp. matcha powder
  • ¼ cup vegan chocolate chips
  • 1 cup water
  1. Place all ingredients into food processor and process until everything is blended together.
  2. Roll mixture into 1-inch balls and sprinkle with shredded coconut.
  3. Store in refrigerator for up to 2 weeks or freeze in freezer.
