Simple and elegant broth-based potato soup with a ton of flavor.

Serves: About 8 cups
  • 64 oz. vegetable stock
  • 5 medium golden Yukon potatoes, diced
  • 1 Tbsp. thyme
  • 1 tsp. sage
  • 1 tsp. garlic, minced
  • 1 Tbsp. vegan butter
  • 1 tsp. salt
  • 1 tsp. pepper
  • Oil and chopped scallion for garnish
  1. In a Dutch oven or deep pot, bring vegetable stock to a boil and reduce to a simmer.
  2. Stir in potatoes, thyme, sage, garlic, butter, salt and pepper.
  3. Cover and simmer until potatoes are soft.
  4. Drizzle olive oil and add scallions; serve.
