Yukon Gold Potato Soup

Serves: About 8 cups
- 64 oz. vegetable stock
- 5 medium golden Yukon potatoes, diced
- 1 Tbsp. thyme
- 1 tsp. sage
- 1 tsp. garlic, minced
- 1 Tbsp. vegan butter
- 1 tsp. salt
- 1 tsp. pepper
- Oil and chopped scallion for garnish
- In a Dutch oven or deep pot, bring vegetable stock to a boil and reduce to a simmer.
- Stir in potatoes, thyme, sage, garlic, butter, salt and pepper.
- Cover and simmer until potatoes are soft.
- Drizzle olive oil and add scallions; serve.
