This vegan version on the BBQ Chicken Salad replaces the meat with seitan and adds a Tex-Mex feel with some Southwestern ingredients.

  1. Add seitan to a large bowl and cover with BBQ sauce. Stir to coat thoroughly and refrigerate for at least 10 minutes.
  2. Assemble all ingredients in a large bowl and mix together well. Put into individual serving bowls and top with ranch dressing. Serve immediately.
