  • Today I’m sharing a recipe for Smoky Tomato and White Bean Soup from @avirtualvegan’s brand new cookbook, VEGAN COMFORT COOKING. It’s an easy dish to make and filled with incredible flavors. That can be said for pretty much all 75 recipes throughout the book. I’ve only made this one so far, but the list of others I’m planning for the upcoming weeks is LONG.   • Anybody in the northeast heading to this amazing event in Atlantic City next weekend? I’m super excited to run the boardwalk 5K on Saturday, to eat way too much delicious #vegan food when I’m done, and to attend some great events with people like @harleyquinnsmith, @officialveganari, @thebeardedvegans, @veganzndahood.   • I'm in the middle of training for a half marathon, so I'm really paying attention to what I eat. For lunch on most days that means a kale salad with various additions mixed in—usually some kind of protein and tons of raw veggies. But what I always put on top is this awesome nut-free, vegan ranch dressing! It's super tasty and basically a blank canvas for additional flavors. I've blended it with avocado, chipotle peppers, a little barbecue sauce and so many other things. Whatever you're feeling on the day, this ranch dressing is ready to go!   • It’s that time again! Back in March I participated in the Pasadena Triathlon and in the leadup to it raised money for Farm Sanctuary. Now—for some reason—I’ve decided to run the Philadelphia Rock and Roll Half Marathon in September, and as I train I’m hoping to collect $750 for @catskill_animal_sanctuary, one of my favorite places in America. Located in upstate New York, this is a haven for over 250 animals rescued from factory farming or neglect. The staff is so incredibly warm and friendly, and the care they give the animals—including some with special needs—is amazing. The sanctuary also advocates for a plant-based lifestyle through cooking courses—and the release of their first cookbook last month—as well as the New Leaf Vegan Mentoring Program, which I’m happy to be a mentor in. But I’d love it if you at least shared the link so that, if nothing else, others can learn about the fantastic work Catskill Animal Sanctuary is doing. Hopefully they’ll get some new visitors and supporters to help further their mission of compassion.
