Orange Roasted Carrots

A simple and delicious side, these Orange Roasted Carrots take minimal effort to make, but pack a ton of flavor. They're the perfect if you don't have a lot of time.

Ingredients

  • Juice from 1 large orange about 4 Tbsp.
  • 2 Tbsp. olive oil
  • 1 Tbsp. grated or powder ginger
  • 1 bunch carrots (about 10–14) trimmed and cleaned
  • salt and pepper to taste

Instructions

  • Preheat oven to 425°F.
  • Add orange juice, olive oil, ginger and salt to a medium-sized bowl and mix.
  • Arrange carrots in one layer on small, high-edged baking sheet. Pour liquid over them and toss to coat. Add salt and pepper at your discretion.
  • Bake for 20 minutes or until the carrots are soft, re-tossing the carrots every 5 minutes to ensure they're coated and not dry. Serve immediately.
