Slow Cooker Irish Stew

This easy Slow Cooker Irish Stew is filled with seitan goodness and packed with amazing flavors. And, of course, it's totally vegan!

Ingredients

  • 4 medium-sized potatoes peeled and cubed
  • 1 large onion chopped into large pieces
  • 1 Tbsp. garlic minced
  • 3 carrots peeled and roughly chopped
  • 8 oz. seitan I used Upton’s Naturals Traditional Seitan
  • 4 cups vegetable stock
  • 1 tsp. vegan Worcestershire sauce
  • ¼ cup flour
  • ½ tsp. salt
  • ½ tsp. pepper

Instructions

  • Add vegetables, seitan, stock and Worcestershire sauce to slow cooker. Add salt and pepper. Set to low and cook for 1 hour.
  • Remove one cup of broth from slow cooker and whisk in flour. Return the broth to the slow cooker and continue to heat on low for another 3 hours or until all vegetables are soft.
