Easy Herbed Tofu Feta

This easy herbed tofu feta is a great as a salad topper or the star of protein-rich dish.

Ingredients

  • 1 14- oz. pack firm tofu
  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • 1 Tbsp. oregano
  • 1 tsp. basil
  • 1 tsp. nutritional yeast

Instructions

  • Place towel on top of tofu and cover with heavy object.
  • Once the liquid is out, cut tofu into ¼-inch cubes and set aside.
  • Mix remaining ingredients together in bowl. Add tofu and stir thoroughly. Marinate 2 hours.
