Easy Herbed Tofu Feta
This easy herbed tofu feta is a great as a salad topper or the star of protein-rich dish.

- 1 14- oz. pack firm tofu
- ¼ cup lemon juice
- ¼ cup apple cider vinegar
- 1 Tbsp. oregano
- 1 tsp. basil
- 1 tsp. nutritional yeast
Place towel on top of tofu and cover with heavy object.
Once the liquid is out, cut tofu into ¼-inch cubes and set aside.
Mix remaining ingredients together in bowl. Add tofu and stir thoroughly. Marinate 2 hours.
