Beyond Meat Chicago-Style Mini Pizzas

Ingredients

  • 1 tsp olive oil
  • 1/2 package Beyond Beef
  • 1 Tbsp. oregano
  • 1 tsp. crushed red pepper
  • 1/4 tsp. salt
  • 2 cups crushed tomatoes
  • 1 package Pilsbury Classic Pizza Crust or your favorite dough
  • Cooking spray or more oil
  • 1 cup plant-based mozzarella shreds
  • 2 Tbsp. plant-based parmesan or nutritional yeast

Instructions

  • Preheat oven to 425° F.
  • Heat oil over medium heat in skillet. Add Beyond Meat and cook, stirring occasionally, for 4 minutes. Set aside.
  • Stir oregano, red pepper and salt into crushed tomatoes. Set aside.
  • Roll out dough and cut six circles about 5 inches in diameter.
  • Grease muffin pan with cooking spray or oil. Line cups with dough, trying to get the edges as close to the top of the pan as possible.
  • Add mozzarella, Beyond Meat, tomatoes and Parmesan evenly among all six cups in that order.
  • Bake for 15 minutes. Remove pan from oven and let cool for a few minutes before serving.

Notes

*Nutritional yeast makes a good substitution if you don’t have any plant-based parmesan on hand.
You’ll probably have some leftover ingredients, so feel free to make another round of pizzas!
