Hawaiian Pizza Grilled Cheese

Ingredients

  • 1 jalapeño pepper seeded and sliced
  • 1 cup pineapple chopped
  • 1/2 tsp Chinese five spice
  • 1 pinch salt
  • 1 Tbsp. olive oil
  • 2 Tbsp. vegan butter
  • 4 thick slices of bread
  • 6 slices vegan ham I used this one from Tofurky
  • 1/2 cup vegan mozarella cheese
  • 1/2 cup vegan cheddar cheese
  • 4 tomato slices

Instructions

  • Preheat oven to 350° F.
  • When the oven is ready, place the jalapeño and pineapple pieces on a baking sheet lined with parchment paper, then bake for 10 minutes.
  • Remove the tray and place the jalapeño and pineapple into a food processor or blender, along with the Chinese five spice and salt. Pulse until everything is well chopped, almost into a sort of relish. Set aside.
  • Heat a large skillet over low-medium heat. As it heats, butter one side of each of the four slices of bread. Add the oil to the pan and allow it to heat up. When it's ready, place two slices of bread in the pan, buttered sides down. Top each one with three slices of vegan ham, 1/4 cup of both cheeses, two spoonfuls of the jalapeño/pineapple relish and two tomato slices. Then add the remaining two slices of bread to the tops—buttered sides up—and cook until the bread is toasted, about 4 minutes. Then flip the sandwiches and repeat on the other side, or until the cheese has started to melt. Serve immediately.
