For a few years now my wife has been obsessed with watermelon popsicles. We bought them from Whole Foods one day, totally out the blue, and she was immediately hooked. The only problem was that after that day we never saw them in the store again.
Since then I’ve looked high and low, occasionally finding variations of this treat, but none of them were ever the real deal—at least until I discovered an off-brand product at a Ralph’s in Palm Springs on our honeymoon one year ago, almost to the day (happy anniversary, honey!). But finding these only increased my wife’s craving. I’ve looked high and low over here on the East Coast over the past 12 months and again couldn’t find the ones I was looking for. Then I decided to make my own.
Popsicles in general are pretty easy to make, and these are possibly the easiest ever. All you need to do is throw everything in the blender, then put it into the popsicle molds and freeze. Five hours later, voilà! You’re looking at the perfect treat for a happy summer afternoon. And for me, it’s a way to make sure my years-long search is over and my wife gets the watermelon popsicles she wants. Happy wife, happy life!
Agave Watermelon Popsicles
Ingredients
- 3 cups watermelon
- 1 tsp. sugar
- 2 Tbsp. agave
Instructions
- Mix all ingredients in blender, pour into popsicle molds, freeze.
