Easy Herbed Tofu Feta

One block away from my office is a By Chloe franchise. If you’re not familiar, it’s a vegan chain that seems to be taking over the world. Chances are, if you’re not near one now you will be soon. It has tons of great dishes, but one of my favorites is the Greek salad. I’m a sucker for these as it is, but By Chloe’s is fantastic. In addition to throwing chickpeas into the mix, By Chloe tops it off with herbed tofu feta. I’m not sure exactly what kind of marinade it has, but I love it so much that it inspired me to make my own for some upcoming recipes.

Easy Herbed Tofu Feta



My herbed tofu feta is pretty simple; it’s no-bake and has only six ingredients total. It’s different than the delicious recipe at By Chloe, but the flavors are pretty awesome. It’s very versatile, too. In addition to using this as a topping on a salad, you can keep a batch in the fridge and use it as the main protein in any number of dishes. It can play a supporting role or be the star. That’s pretty awesome.

Easy Herbed Tofu Feta

This easy herbed tofu feta is a great as a salad topper or the star of protein-rich dish.

Yield: 16 -20 cubes

Ingredients

  • 1 14- oz. pack firm tofu
  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • 1 Tbsp. oregano
  • 1 tsp. basil
  • 1 tsp. nutritional yeast

Instructions

  • Place towel on top of tofu and cover with heavy object.
  • Once the liquid is out, cut tofu into ¼-inch cubes and set aside.
  • Mix remaining ingredients together in bowl. Add tofu and stir thoroughly. Marinate 2 hours.

    This is so tasty. My daughter suggested a little garlic which would also be good. Next time I’ll try freeze dry tofu see how that goes.

Hi there! 👋 It’s been quite a while since I’ve posted. Turns out training for a marathon takes just about all of your effort. Who knew? But I’m back now with what I hope will be the first of consistent weekly recipes (at least until the next marathon 😂).

This one is for Baked Tofu and Baby Bok Choy. It’s SUPER simple and takes very little effort. Plus it’s totally versatile too; you can serve it with rice, with noodles, or even in a soup—whatever you’re feeling on the day. 

I used @nasoya’s extra firm tofu here because it’s non-GMO Project verified, USDA organic, cholesterol-free, gluten-free, and preservative-free. All the things I look for when buying products these days.

I’m so happy to be back sharing recipes and can’t wait to pit a few more out there in the upcoming weeks!

We have a wonderful ramen restaurant here in our t We have a wonderful ramen restaurant here in our town of Montclair. They offer a vegan version they is out of this world. But whenever we order from them Laura and I are equally, of not more, excited about the edamame they serve: it’s tossed in chili oil and charred. So amazing. Of course I had to take a shot at recreating it for the site and this Chili-Charred Edamame recipe was born. It’s great as either an appetizer or a snack!
