Peppermint Hot Chocolate

Add a little kick to your holiday nights with this wonderful Peppermint Hot Chocolate.
It’s easy to make and SUPER delicious!

Peppermint Hot Chocolate Nutfreevegan

The holidays look at lot different this year for most people. For Laura and me it’s the first Christmas where, as we did for Thanksgiving, we are staying at home and celebrating with just the two of us—and with our wonderful cat, Pinky. But that’s OK. Next year things will be back to normal and we’ll get to share the days with our family again. I, for one, don’t mind not traveling though, and it’s nice to have a small dinner. That doesn’t mean I won’t be cooking a ton of food though, of course.

And on Christmas night we’ll sit in our living room by our tree (this is the one that was instrumental in my proposal to her, which you can read about in this piece she wrote for Good Housekeeping) and sip this absolutely delicious Peppermint Hot Chocolate.



Such simple ingredients!

Only five things go into this festive drink: your favorite plant-based milk (I use Planet Oat’s Extra Creamy Oatmilk because a) oatmilk rules, and b) it’s thicker than other oatmilks out there and that’s great for hot chocolate), some cocoa, semi-sweet chocolate (for this I used Enjoy Life’s Mini Chips, but any dairy-free chocolate would work), peppermint extract and coconut sugar (you can use any kind of sugar for this, but I love the kind of caramel taste that coconut sugar provides). So easy! And bonus points if you have some candy canes to smash up and sprinkle on top for a fun garnish.

All you really need to do to make this drink is mix everything together in a saucepan on the stove. It couldn’t be easier. Peppermint Hot Chocolate

Get cozy and indulge with this vegan version of a real holiday favorite, Peppermint Hot Chocolate.

Ingredients

  • 4 cups oat milk or your favorite plant-based milk
  • 2 Tbsp. cocoa
  • 4 oz. semi-sweet chocolate or 1/2 cup
  • 2 Tbsp. coconut sugar or whatever your favorite sugar is
  • 1 Tbsp. peppermint extract

Instructions

  • Bring milk to a simmer over high heat in a small saucepan.
  • Reduce heat to low and whisk in cocoa powder until it’s mixed thoroughly.
  • Add semi-sweet chocolate and whisk until melted.
  • Add sugar and peppermint extract; stir until sugar is dissolved.
  • Serve immediately with plant-based whipped topping and crushed candy canes if you'd like.

Hi there! 👋 It’s been quite a while since I’ve posted. Turns out training for a marathon takes just about all of your effort. Who knew? But I’m back now with what I hope will be the first of consistent weekly recipes (at least until the next marathon 😂).

This one is for Baked Tofu and Baby Bok Choy. It’s SUPER simple and takes very little effort. Plus it’s totally versatile too; you can serve it with rice, with noodles, or even in a soup—whatever you’re feeling on the day. 

I used @nasoya’s extra firm tofu here because it’s non-GMO Project verified, USDA organic, cholesterol-free, gluten-free, and preservative-free. All the things I look for when buying products these days.

But whenever we order from them Laura and I are equally, of not more, excited about the edamame they serve: it’s tossed in chili oil and charred. So amazing. Of course I had to take a shot at recreating it for the site and this Chili-Charred Edamame recipe was born. It’s great as either an appetizer or a snack!
