medium golden Yukon potatoes
diced

thyme

tsp.
sage

tsp.
garlic
minced

vegan butter

tsp.
salt

pepper
Oil and chopped scallion for garnish
Instructions
In a Dutch oven or deep pot, bring vegetable stock to a boil and reduce to a simmer.
Stir in potatoes, thyme, sage, garlic, butter, salt and pepper.
Cover and simmer until potatoes are soft.
Drizzle olive oil and add scallions; serve.
