I’ve been looking over the site recently and realized I don’t have as many entrees available as I should. That’s something I’m hoping to change over the next few weeks, starting with this one: a super easy recipe for Instant Pot Cacio E Pepe. 

This classic Italian dish only requires five ingredients to make, but they come together so beautifully to create incredible flavor in each bite. And it’s made in the Instant Pot, which means it takes no time at all—less than a half hour, in fact. It’s the perfect for when you need a cheap, quick dinner during the week!



Only five ingredients

Not too much goes into making this Instant Pot Cacio E Pepe. But what is in there is a perfect flavor combination. The base is spaghetti, and it cooks in vegetable broth—No-Chicken Broth from Imagine Foods works really well to add even more flavor if you can find it—and a little plant-based butter. When it’s done all you have to do is mix in the vegan parmesan (I use VioLife) and pepper and you’re all set. So easy!

Putting it together

To make the pasta, break the spaghetti in half and place it in the Instant Pot. Add the broth and butter and make sure the pasta is fully submerged—it took me a few tries to figure this out. Then you simply cook everything on high pressure for eight minutes and allow the steam to release. I don’t think it really matters whether you open the release valve or allow it to escape naturally. I’m kind of impatient, so I always do the former. . . . Then you stir in the remaining ingredients and voilà! Dinner is served!

Ingredients

  • 1 16 oz. package spaghetti
  • 2 1/2 cups vegetable broth
  • 2 Tbsp. plant-based butter
  • 1 1/2 cups plant-based parmesan cheese grated
  • 1 Tbsp. black pepper

Instructions

  • Break spaghetti in half and place in Instant Pot. Add vegetable broth and butter, making sure to submerge the spaghetti.
  • Set Instant Pot to high pressure and cook pasta for 9 minutes. Allow steam to release either naturally or by manually opening the valve.
  • Stir in parmesan cheese and pepper. Plate and serve immediately, topping with more cheese and pepper as desired.

Notes

With the proper pasta this recipe can be gluten-free.

But whenever we order from them Laura and I are equally, of not more, excited about the edamame they serve: it’s tossed in chili oil and charred. So amazing.
