ALLERGENS: NONE
An easy-to-make, healthy and delicious side dish, this roasted broccoli with garlic is perfect for your weeknight dinner.
There’s a really great Mediterranean fast food chain in NYC called Maoz. I usually get the falafel salad with hummus, and then it’s on to the amazing toppings bar. There, you can get everything from chickpea salad to tabbouleh, and tons of other stuff, too. My favorite, though, is the baked broccoli and cauliflower. I end up loading my bowl with more of that than the falafel or hummus.
Of course, when I find things like that out on the town I want to re-create them at home. That’s what I did here.
Ingredients
This one is super simple—just six ingredients and they’re basics you can find just about anywhere. You have your broccoli, of course, along with oil, salt, pepper, lemon, and red pepper flakes. Just mix it all together and you’re in business!
Mix everything together in a large bowl.
Spread the broccoli onto a parchment-lined baking tray and bake.

[…] Every once in a while I like to share a super-easy side dish I can throw together at the last minute. Maybe you don’t have a lot of time to spend in the kitchen, as is the case for me most nights. I work at my day job designing books until about 4:30 p.m. and get home around 6 p.m. After a quick stop at the store I usually either work on The Nut-Free Vegan or freelance design projects. So my evenings are pretty full, and an easy dinner is key. Besides, some of the simplest things tend to be the best things, like this Roasted Broccoli with Garlic. […]
